Oyster mushrooms
help reduce cholesterol and contain ergothioneine, a unique antioxidant exclusively produced by fungi. They also contain significant levels of zinc, iron, potassium, calcium, phosphorus, vitamin C, folic acid, niacin, and vitamins B1 and B2. They’re about 30% protein by weight and contain 8 essential amino acids in respectable qualities.
